Sagudai
Sagudai is a dish of raw fish . It is prepared, as a rule, from local, northern types of fish: whitefish, muksun, chira, bream;and can also be prepared from other varieties of fish (nelma, valek, salmon, etc.). Recipes may differ slightly from each other, but they are based on fish meat, vegetable oil, onions, salt, black pepper, vinegar (or other sour base). Grated apple and other spices are also added. Sagudai is valued as a good snack. Made from freshly caught fish, it is ready to eat in 10-15 minutes.
